180g plain flour
60g icing sugar
3 egg yolk
120g chocolate (60%)
120g single cream
Mix the icing sugar and the flour together. Add the butter and whip until obtaining a fluffy texture. Add the two egg yolks. Put in the refrigerator for 30 minutes.
Once cooled down, roll the dough and put it in a tart form.
Put it in the oven for 10 minutes in a 160°C preheated oven. When you take it out, let it cool down.
Preheat your oven to 170°C.
Break the chocolate into pieces into a bowl. In a pot, boil the milk, the butter and the cream. Add this mixture to the chocolate. Mix well and add the lightly beaten eggs to your mixture.
Pour the mixture into your tart and put it in the oven for 20 minutes. After 20 minutes turn off the oven but leave your tart inside for another 15 minutes.
To check whether your tart is ready just tap the surface. It should be slightly trembling. Feel free to put it back in the oven if needed.
If you’re lactose intolerant and you don’t have substitutes for each ingredient containing dairy, you can take a lactase supplement before eating the tart to digest it symptom free! Check out Lea Gogo’s lactase tablets here.
